Just in time for Christmas, this fruit cake recipe is perfect for any occassion
Prep Time 20 minutes
Cook Time 1 hour 40 minutes


  • 180 g butter (softened)
  • 1 cup Rainforest honey
  • 4 eggs
  • 1 cup self raising flour
  • 1 cup plain flour
  • 750 g mixed dried fruit
  • 1 tbsp rum


  • Preheat oven to 180 degrees ℃
  • Cream the butter and honey
  • Seperate eggs
  • Add egg yolks and flours, mixed fruit and rum
  • Fold in whipped egg whites
  • Spoon mixtures into greased cake tin and bake for approximately 1 hr 40 min. Check with skewer
