Ingredients
Salad:
- 2 cups cooked quinoa
- 6 cups baby spinach leaves
- 1/4 cup raw pecans
- 1/4 cup crumbled feta cheese
- 1 ripe avocado, sliced
- 1 large red apple sliced
- 1/4 cup dried apricots
Dressing:
- 2 lemons, juiced
- 2 tbsp AB's Ginger in Honey
- 2 tsp garlic, minced
- 4 tbsp olive oil
- salt and pepper to season
Instructions
- In a large salad bowl, combine the spinach leaves, quinoa, apple, and dried apricots
- Gently mix in the avocado slices
- Whisk together all the dressing ingredients in a bowl
- Drizzle the dressing on the salad just before serving and gently toss to combine
- Top the spring salad bowl with pecans and crumbled feta cheese
