4 Ingredient breakfast cookies

Naturally sweetened with ripe (and I mean super ripe) bananas, Manuka Honey and Cinnamon they come together in less than 20 minutes.

You can mix-and-match your toppings to suit your preferences (an extra drizzle of honey comes in clutch).

Serve them with some yoghurt and fresh fruit for a balanced breakfast meal prep or have them on their own as a snack (or if you're running out the door and just need to grab something)

INGREDIENTS (makes ~10 cookies)
• 1 cup mashed banana (2 small or 1 large)
• 1 cup rolled oats
• 3/4 cup protein powder
• 2 tbsp Manuka and Cinnamon in Honey (or honey + some cinnamon)

1. Mash banana
2. Mix in rest of the ingredients (The dough should be soft but not overly wet — you should be able to pick it up and shape it without it sticking excessively to your hands)
3. Form balls and then press flat into cookie shapes (they won't spread much so make them desired thickness now)
4. Bake at 160°C (320°F) for 12-15 minutes or until lightly golden around the edges.
