This easy sticky ground beef with rice is bulked out with bok choy and carrot which tastes amazing in the Rainforest honey soy sauce with a hint of chilli to keep things interesting.
The flavours develop overnight so it's the perfect meal prep option for your week ahead.

Ingredients (serves ~4)
• 1/4 cup Rainforest honey
• 1 tsp ginger
• 1/4 cup kecap manis
• 2 tbsp soy sauce
• 1 lime
• 4 garlic cloves
• 2 tbsp crushed chilli
• 500g beef mince
• 1 cup rice (or 3 cups cooked)
• 3 carrots, julienned
• 3 bunch bok choy, sliced
1. Mix together sauce ingredients
2. Heat oil on stove over medium heat then add beef mince and cooked until mostly brown.
3. Add carrots, bok choy and sauce in. Bring to a boil and then reduce heat to low.
4. Once the sauce has thickened (approx. 5 minutes) remove and serve. Note - if sauce is struggling to thicken, add 1 tsp of cornflour to 2 tbsp of water then mix into the sauce.
