The salmon bites are marinated in a sweet and sticky honey, ginger, soy sauce using Ginger in honey.
It’s got just the right kick from the ginger and balanced with the freshness from the mango salsa which is perfect for an Australian summer.

RECIPE (serves ~4)
HONEY GINGER MARINADE
• 3 tbsp soy sauce
• ½ cup ginger in honey
• 1 tbsp white wine vinegar
• 1 tbsp lemon juice
• 1 tsp sesame oil, optional but recommended
• 2 cloves garlic, crushed
• 1 tbsp ginger, grated
RICE BOWL
• 1 cup rice, yields 3 cups cooked
• 4 pieces salmon, diced
• 1 mango, diced
• 2 small cucumbers, diced
• ½ red onion, diced
1. In a small bowl, whisk together sauce ingredients and add diced salmon for 10-20 minutes (or up to an hour).
2. Add salmon pieces (in the marinade) to an oven-safe container and bake at 200°C (400°F) for 10–12 minutes until cooked through.
3. Add cooked rice, top with salmon bites, spoon over extra sauce, and finish with mango salsa.
