Ingredients
- 4 chicken thighs
- 200g / 1 cup rice (uncooked)
- 1 head broccoli
- 1/2 cup Ginger in Honey
- 1 tbsp white wine vinegar
- 2 tbsp soy sauce
- 2 cloves garlic
- 2 tbsp ginger
Mix together sauce ingredients and add chicken thighs to marinate for at least 10 minutes.
- Prepare rice and broccoli according to your preferences.
- Heat oil over pan on medium-high heat. Add chicken thighs and cook for 5 minutes per side until golden and caramelised. While cooking, coat with remaining marinade.
- Check doneness: chicken should reach an internal temperature of 70°C/165°F. Remove and let rest for at least 10 minutes before slicing.
