WW2 GINGER HONEY COOKIES
This recipe dates to the second world war when rationing was in force. Biscuits were a popular treat to make during WW2 as they did not require a lot of equipment or time to cook. Duringthe war sugar was rationed and but honey was plentiful so was used to sweetenin baking instead of using a larger quantity of sugar.

- 170 g plain flour
- 3 tsp baking powder
- 30 g caster sugar
- 70 g butter
- 1 tsp ground ginger
- 1 tbsp honey (we recommend using our ginger honey for some added spice)
- 1 pinch salt
Preheat oven to 180°C
Cream the butter and sugar together then add the honey.
Sift in the flour, baking powder, ginger and salt and mix to form a dough.
Add a splash of water if necessary to bring the mixture together.
Roll out the dough to desired thickness. Using biscuit cutters, cut out your biscuits from the dough.
Placed on a sheet of grease proof paper and cook in the oven on 180°C for 10 minutes or until golden brown.
Cool on a wire rack.
