WW2 GINGER HONEY COOKIES

This recipe dates to the second world war when rationing was in force. Biscuits were a popular treat to make during WW2 as they did not require a lot of equipment or time to cook. Duringthe war sugar was rationed and but honey was plentiful so was used to sweetenin baking instead of using a larger quantity of sugar.

Ingredients
  

  • 170 g plain flour
  • 3 tsp baking powder
  • 30 g caster sugar
  • 70 g butter
  • 1 tsp ground ginger
  • 1 tbsp honey (we recommend using our ginger honey for some added spice)
  • 1 pinch salt

Instructions
 

  • Preheat oven to 180°C
  • Cream the butter and sugar together then add the honey.
  • Sift in the flour, baking powder, ginger and salt and mix to form a dough.
  • Add a splash of water if necessary to bring the mixture together.
  • Roll out the dough to desired thickness. Using biscuit cutters, cut out your biscuits from the dough.
  • Placed on a sheet of grease proof paper and cook in the oven on 180°C for 10 minutes or until golden brown.
  • Cool on a wire rack.
