Delicious Fruit Cake

This Delicious Fruit cake with honey is sure to be a family favourite all year round.

Ingredients
  

  • 1 cup Self Raising flour
  • 1 cup Plain flour
  • ½ tsp Bi Carb soda
  • ½ tsp Mixed Spices
  • 1 tbsp Coffee essence
  • 1 cup Mixed fruit (dried)
  • 1 cup butter
  • ½ cup Rainforest honey
  • 3 eggs
  • ½ cup milk
  • ¼ tsp salt

Instructions
 

  • Preheat oven to 180 degrees ℃
  • Sift both flours; bi carb soda, mixed spices and salt together
  • Divide into 2 equal parts and set aside
  • Cream butter and Rainforest honey, beating well after each addition. Beat in eggs one at a time
  • Add one half of the flour mix, mixing well
  • Add milk and remaining flour and dried mixed fruit. Mix well, do not over mix
  • Bake in lined 8 inc (20cm) cake tin
